Shrimp Ceviche...Another one of Sandrita's Fantastic Recipes
Hola - greetings again from Sandra Corona, the Hispanic expert here at Spanish Online. Esta receta es la comida favorita de mi marido, Juan Carlos. Es algo un poco caro, pero vale la pena! (it's a little expensive, but worth it!)
Shrimp Ceviche - Ceviche de Camarones
3 lbs (libras) small shrimp (camarones chicos)
10 roma tomatoes
1 large onion (cebolla grande)
2 chiles jalapeños
1 portion cilantro
1 avocado (aguacate)
5 limes
salt to taste
bag of corn chips or tostadas
Finely chop tomatoes, onion, cilantro and jalapenos in a large mixing bowl. Wash the shrimp thoroughly and add to chopped veggies. Squeeze lime juice into bowl with veggies. Mix thoroughly so lime juice gets into all the chopped veggies. Next, add salt to taste and chop avocado into tiny bite size pieces and add to bowl. Let stand covered for 30 minutes so lime juice cooks veggies, about 15 minutes into it, mix thoroughly & let stand another 15 minutes, then serve. Eat with chips or tostadas. ¡Delicioso!

Make sure to wash the shrimp thoroughly using a strainer, preferably in cold salt water.
