A New Mexican Recipe from Sandrita - Rajas con Crema
Here is another one of my marido's favorite meals. I think all of the meals I prepare for him are his favoritos, as they are all prepared with loving care for my family :)
Rajas con crema
20-25 chiles anaheim
1 medium white onion
2 jars of mexican table cream
or 1 large tub of sour cream
Take your chiles and place on a comal or grill. Char them until they are dark dark green almost black, then place in a plastic bag until all chiles are charred. Remove charred skin from all the chiles and open, remove seeds and veins, cut into long strips.
In a large pan, place 1/4 oil on high heat. Once the oil is hot - pour in 2 jars of cream or sour cream. Once it starts to bubble, add the chile strips and turn down to simmer. Add salt, pepper and garlic powder to taste.
These are very good with tostadas! ˇEspero que los disfruten!
