Sandrita's Fantastic Pico de Gallo Salsa Recipe

This is the best salsa around!

Pico de Gallo con Nopalitos (cactus)

Ingredientes:

1 medium onion (yellow or white)
4 roma tomatoes
2 jalapeños
1 cilantro bunch (only use half)
2 limes
2 cactus leaves (de-thorned)
or store bought already cooked cactus in a ajar
salt and pepper to taste

Finely chop onion in a large bowl, dice tomatoes and chop jalapeños (leave seeds and veins if you want it hot) chop cilantro and add to bowl. If you use fresh cactus, de-thorn, and cut in long strips then, chop in small pieces.

Place cactus in 3 cups of hot boiling water with salt, cook thoroughly (about 15 mins) rinse with cold water, cactus will feel slimy.

Add to bowl and stir up, add fresh lime juice and salt and pepper to taste. Let stand about 20 minutes. Best eaten with "carnitas" or with chips and tostadas. Enjoy!

This is my favorite salsa. I can eat the whole bowl. Yummy

I used this Pico De Gallo with a dish at a BBQ contest and we won 1st place, with a PERFECT score! The main dish also helped I guess GRIN, the thing I really want to say is this Pico is indeed FANTASTIC! Sweet, Savory and not a bite in the bowl! It is now the only Pico I make!
